In a small saucepan, combine 1 cup of chopped rhubarb, 1 cup of water, and 1 cup of sugar. Bring the mixture to a boil, then reduce the heat and simmer for about 15 minutes, until the rhubarb is soft and the sugar has dissolved. Remove from heat and let the syrup cool.
In a shaker filled with ice, combine 2 ounces of rum, 2 ounces of freshly squeezed grapefruit juice, 1 ounce of freshly squeezed lime juice, and 1 ounce of the rhubarb syrup. Shake well to mix all the flavors together.
Strain the cocktail into a chilled glass filled with ice. Garnish with a slice of grapefruit or a sprig of fresh mint, if desired. Sip and enjoy!
