Pop 1/2 cup of popcorn kernels using your preferred method. You can use an air popper, stovetop pot, or microwave popcorn. Make sure to remove any unpopped kernels.
In a large saucepan, melt 1 cup of unsalted butter over medium heat. Once melted, add 2 cups of packed brown sugar and 1/2 cup of light corn syrup. Stir until well combined and the sugar has dissolved.
Increase the heat to medium-high and bring the caramel mixture to a boil. Let it boil for 5 minutes without stirring, until it becomes a deep amber color.
Remove the caramel from heat and carefully stir in 1 teaspoon of vanilla extract and 1/2 teaspoon of salt. This will give your caramel a delicious hint of flavor and balance the sweetness.
Pour the caramel over the prepared popcorn, working quickly but carefully to evenly distribute the caramel. Use a rubber spatula to gently toss and coat the popcorn.
Spread the coated popcorn onto a baking sheet lined with parchment paper or a silicone baking mat. Bake in a preheated oven at 250°F (120°C) for 60 minutes, stirring every 15 minutes to ensure even baking and prevent burning.
Once baked, remove the caramel popcorn from the oven and let it cool completely. Break it apart into bite-sized pieces and indulge in the gooey goodness. Grab a bowl and enjoy!
