Be careful not to overcook the quinoa as it can become mushy. Also, make sure to properly wash and prepare all the vegetables before using them.
In a medium saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat and simmer for about 15 minutes or until the water is absorbed. Fluff with a fork and let it cool.
While the quinoa is cooking, chop 1 cucumber, 1 red bell pepper, 1 red onion, and a handful of cherry tomatoes. Finely chop some fresh parsley and mint leaves. Set aside.
In a small bowl, whisk together 3 tablespoons of olive oil, 2 tablespoons of lemon juice, 1 minced garlic clove, 1 teaspoon of dried oregano, and salt and pepper to taste. Set aside.
In a large mixing bowl, combine the cooked quinoa, chopped veggies, and the dressing. Toss everything together until well coated.
Cover the bowl and refrigerate the salad for at least 30 minutes to allow the flavors to meld together. If you can resist the temptation, let it chill for up to 2 hours for maximum deliciousness!
When you're ready to serve, give the salad a final toss and garnish with some additional fresh herbs. Grab a fork, close your eyes, take a bite, and let the Mediterranean flavors transport you to paradise!
