Please note that although this recipe contains strawberries, it does not contain any actual scotch or alcohol. So, no need to worry about your sobriety! Also, be careful when handling sharp objects such as knives, and make sure to supervise children if they are helping you with the preparation.
In a small saucepan, combine 1 cup of fresh or frozen strawberries, 1/2 cup of sugar, and 1/2 cup of water. Bring the mixture to a boil over medium heat, stirring occasionally. Once the sugar has dissolved and the strawberries have softened, remove the saucepan from the heat.
Using a blender or food processor, puree the strawberry mixture until smooth. Then, strain the mixture through a fine-mesh sieve to remove any seeds or pulp. Transfer the strained syrup into a container and let it cool completely.
In a glass or mason jar, pour 1/4 cup of the strawberry syrup into the bottom. Tilt the glass slightly and slowly pour 1/4 cup of club soda or sparkling water down the side of the glass. This will create the striped effect. Repeat this step with another 1/4 cup of syrup and 1/4 cup of club soda, tilting the glass in the opposite direction.
Fill the glass with ice cubes and top it off with more club soda. Give it a gentle stir to mix the flavors. To add an extra touch of elegance, garnish your mocktail with a fresh strawberry or a sprig of mint. You can also add a colorful paper umbrella for a tropical vibe!
