Stay refreshed with our refreshing Watermelon Cupcakes! These fruity delights are the perfect summer dessert.
Take note
Be careful when handling the knife and be sure to let the cupcakes cool before frosting.
In a mixing bowl, combine 1 and 3/4 cups of all-purpose flour, 1 teaspoon of baking powder, and a pinch of salt. In a separate bowl, cream together 1/2 cup of unsalted butter and 3/4 cup of granulated sugar. Beat in 2 large eggs and mix well. Gradually add the dry ingredients to the wet mixture, alternating with 1/2 cup of buttermilk. Once the batter is smooth, gently fold in 1/2 cup of diced watermelon.
Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners and fill each one about two-thirds full with the batter. Pop the tin in the oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Remove from the oven and let them cool completely.
In a mixing bowl, beat 1/2 cup of unsalted butter until creamy. Gradually add 2 cups of powdered sugar, 1 tablespoon of milk, and 1/4 teaspoon of watermelon extract. Beat until smooth and fluffy. If desired, add a few drops of pink food coloring for a vibrant watermelon color.
Using a piping bag or a spatula, frost each cupcake with a generous amount of watermelon frosting. Top each cupcake with a small wedge of fresh watermelon to resemble a juicy slice. Serve chilled and enjoy the refreshing flavors!
