  • Unsalted Butter 1/2 cup
  • Granulated Sugar 3/4 cup
  • Large Eggs 2
  • Buttermilk 1/2 cup
  • Diced Watermelon 1/2 cup
  • Powdered Sugar 2 cups

Prepare the Cupcake Batter

In a mixing bowl, combine 1 and 3/4 cups of all-purpose flour, 1 teaspoon of baking powder, and a pinch of salt. In a separate bowl, cream together 1/2 cup of unsalted butter and 3/4 cup of granulated sugar. Beat in 2 large eggs and mix well. Gradually add the dry ingredients to the wet mixture, alternating with 1/2 cup of buttermilk. Once the batter is smooth, gently fold in 1/2 cup of diced watermelon.

Bake the Cupcakes

Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners and fill each one about two-thirds full with the batter. Pop the tin in the oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Remove from the oven and let them cool completely.

In a mixing bowl, beat 1/2 cup of unsalted butter until creamy. Gradually add 2 cups of powdered sugar, 1 tablespoon of milk, and 1/4 teaspoon of watermelon extract. Beat until smooth and fluffy. If desired, add a few drops of pink food coloring for a vibrant watermelon color.
