Peel, core, and dice 2 apples. In a bowl, mix the diced apples with 1/4 cup of sugar, 1 teaspoon of cinnamon, and a squeeze of lemon juice. Set aside.
In a food processor, pulse 1 1/4 cups of all-purpose flour, 1/4 teaspoon of salt, and 1/2 cup of cold unsalted butter until the mixture resembles coarse crumbs. Add 3 tablespoons of ice water and pulse until the dough comes together. Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for 30 minutes.
Preheat your oven to 375°F (190°C). On a lightly floured surface, roll out one of the dough disks to a 1/8-inch thickness. Using a round cookie cutter or a glass, cut out circles that are about 4 inches in diameter. Repeat with the second dough disk.
Place a spoonful of the prepared apple filling onto a dough circle. Brush the edges of the circle with a beaten egg. Top with another dough circle and press the edges together to seal. Repeat for the remaining dough circles and apple filling.
Transfer the assembled mini pies onto a baking sheet lined with parchment paper. Brush the tops with beaten egg and sprinkle with a little sugar. Bake for 20-25 minutes or until the crust is golden brown. Allow the mini pies to cool slightly before serving. Enjoy!
