First, make sure you have all the necessary items on hand. You'll need: 200g of dark chocolate, 200ml of double cream, 50g of unsalted butter, and your choice of coating such as cocoa powder, chopped nuts, or sprinkles.
Break the dark chocolate into small pieces and place them in a heatproof bowl. Heat the double cream and butter in a saucepan until it just starts to boil. Pour the hot cream mixture over the chocolate and let it sit for a minute. Then, stir until the chocolate is completely melted and smooth.
Cover the bowl with the melted chocolate mixture and place it in the refrigerator for at least 2 hours or until it becomes firm enough to handle.
Once the mixture is firm, use a teaspoon to scoop out portions of the chocolate mixture. Roll each portion into a small ball between your palms. If the mixture gets too soft, return it to the refrigerator for a few minutes to firm up again.
Now comes the fun part! Roll each truffle in your chosen coating, such as cocoa powder, chopped nuts, or sprinkles. Make sure to coat them evenly and set them aside on a lined tray.
Place the tray of freshly coated truffles back in the refrigerator for another 30 minutes or until they are fully set. Once chilled, you can transfer them to an airtight container and store them in the fridge until you're ready to indulge!
