In a heatproof bowl, melt 8 ounces of dark chocolate in the microwave or over a double boiler. Once melted, stir in 1/4 cup of heavy cream until smooth. Then, add 2 tablespoons of toffee bits and 2 tablespoons of tequila. Mix well to combine all the flavors.
Place the ganache mixture in the refrigerator for about 2 hours, or until it becomes firm enough to handle. Once chilled, use a melon baller or a spoon to scoop out small portions of the ganache. Roll each portion into a ball and place them on a parchment-lined baking sheet.
Now, it's time to give our truffles a delightful crunchy texture. Take a handful of additional toffee bits and roll each truffle in the bits, gently pressing the toffee onto the surface of the truffles. Make sure each one is fully coated for extra deliciousness!
Pop the baking sheet into the refrigerator for another 30 minutes to allow the truffles to set and firm up. Once chilled, transfer the truffles into an airtight container and store them in the refrigerator until ready to enjoy. Serve and savor each delightful bite!
