In a large mixing bowl, combine 1 cup of dried chickpeas, 1/2 cup of chopped parsley, 1/2 cup of chopped cilantro, 1/4 cup of diced onion, 3 cloves of minced garlic, 1 teaspoon of ground cumin, 1 teaspoon of ground coriander, 1/2 teaspoon of salt, and a pinch of cayenne pepper. Mix well to combine.
Transfer the falafel mix to a food processor and pulse until it forms a coarse paste. Be careful not to over-blend, as you want some texture in the falafel. If needed, you can add a tablespoon of water to help bind the mixture together.
Using your hands, shape the falafel mixture into small patties or balls. If the mixture feels too dry, slightly dampen your hands with water to prevent sticking. Aim for bite-sized portions for easy snacking.
Heat a generous amount of vegetable oil in a frying pan over medium-high heat. Carefully place the falafel patties or balls into the hot oil and cook for about 3-4 minutes per side, until golden brown and crispy. Transfer to a paper towel-lined plate to remove excess oil.
In a bowl, layer fresh salad greens, sliced cucumbers, cherry tomatoes, sliced red onions, and pickled turnips. Top with the crispy falafel patties or balls. Drizzle with tahini sauce or your favorite dressing. Garnish with chopped parsley and a squeeze of lemon juice.
