Wash a cucumber thoroughly and slice it into small pieces. You can peel the cucumber if desired.
Place the cucumber slices and a handful of fresh mint leaves into a blender. Blend until smooth and well combined.
Pour the cucumber-mint mixture into a bowl. Add your preferred sweetener (such as honey or agave syrup) and the juice of one lemon. Stir well.
Carefully pour the mixture into popsicle molds, filling them almost to the top. Leave a little space for expansion during freezing.
Gently insert popsicle sticks into the center of each mold, making sure they are securely positioned. The sticks should stand upright.
Place the popsicle molds in the freezer and let them freeze for at least 4-6 hours, or until completely solid. Once frozen, remove the popsicles from the molds and enjoy!
