Start by preheating your oven to 350°F (175°C) and greasing a 9x13-inch baking dish. In a large bowl, combine 2 cups of all-purpose flour, 1/2 cup of powdered sugar, and a pinch of salt. Cut in 1 cup of cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Press the crust mixture evenly into the prepared baking dish.
Pop the crust in the preheated oven and bake for 15-20 minutes, or until it turns lightly golden around the edges. Remove from the oven and set aside.
In another bowl, whisk together 4 large eggs, 2 cups of granulated sugar, 1/3 cup of all-purpose flour, and the juice and zest of 2 lemons. Mix until well combined and smooth.
Pour the lemon filling over the baked crust, spreading it out evenly. Return the dish to the oven and bake for an additional 20-25 minutes, or until the filling is set and no longer jiggles in the center.
Remove the Lemon Bars from the oven and let them cool completely in the baking dish. Once cool, use a sharp knife to cut them into squares or rectangles. Dust with powdered sugar if desired and serve!
