Start by toasting your bread slices until they are nice and crunchy. This will be the turtle's shell. Set aside to cool.
In a mixing bowl, combine the tuna, mayonnaise, diced celery, and a squeeze of lemon juice. Mix it all together until it's well combined and deliciously creamy.
Take one slice of toasted bread and place it on a clean cutting board. Spread a generous amount of the tuna filling on top, leaving a small border. This will be the turtle's body. Now, take another slice of toasted bread and cut out a large circle as the turtle's head. Place it on top of the filling, slightly overlapping the body. Use two olive slices for eyes, and thinly sliced cucumber or green bell pepper strips for the turtle's legs and tail. Get creative and have fun with it!
Preheat your toaster or sandwich press, and lightly butter the outside of your turtle-shaped sandwich. Gently place it in the toaster or sandwich press, and toast until the bread is golden brown and the filling is warm and gooey.
