Remove the pan from the oven and let the cupcakes cool in the pan for a few minutes. Then, transfer them to a wire rack to cool completely before frosting.
In a mixing bowl, beat 1/2 cup of unsalted butter until creamy. Gradually add 2 cups of powdered sugar and continue beating until smooth. Mix in 1 teaspoon of vanilla extract. For a vibrant touch, divide the frosting into three portions and tint each portion with matching food coloring as you did for the cupcake batter.
Using a piping bag fitted with a star tip, pipe swirls of frosting onto each cupcake. Sprinkle with some edible glitter or rainbow sprinkles for extra magic. Finally, top each cupcake with a unicorn-themed decoration, such as a fondant horn or edible unicorn topper.
