Round up the following fresh ingredients: 4 ripe tomatoes, 1 small red onion, 1 jalapeno pepper, 1 lime, a handful of fresh cilantro, and salt to taste.
Dice the tomatoes, finely chop the red onion, seed and finely chop the jalapeno pepper, and roughly chop the cilantro. Remember, the smaller the chop, the easier it is to scoop up with a chip!
Combine the diced tomatoes, chopped onion, jalapeno pepper (adjust the amount to your desired level of heat), and cilantro in a bowl. Squeeze in the juice of one lime and sprinkle with salt to taste. Give it all a good mix.
Cover the bowl with plastic wrap or transfer the salsa to an airtight container. Place it in the refrigerator to let the flavors mingle and chill for at least 30 minutes.
Take a taste of your salsa and adjust the seasonings if needed. Add more salt, lime juice, or even a pinch of sugar for balance. Don't be afraid to get creative!
