Gather all the necessary ingredients: 1 lb merguez sausage, 1 onion (diced), 2 cloves of garlic (minced), 1 bell pepper (sliced), 1 carrot (sliced), 1 zucchini (sliced), 1 can of diced tomatoes, 1 cup of vegetable broth, 1 tablespoon of Moroccan spice blend, salt and pepper to taste.
Heat a large tagine or deep skillet over medium-high heat. Add a drizzle of olive oil and sear the merguez sausages until browned on all sides. Remove from the tagine and set aside.
In the same tagine or skillet, add the diced onion and minced garlic. Sauté until fragrant and onion becomes translucent. Add the sliced bell pepper, carrot, and zucchini. Cook for a few minutes until the vegetables start to soften.
Pour in the can of diced tomatoes and vegetable broth into the tagine. Sprinkle the Moroccan spice blend, salt, and pepper. Give everything a good stir and bring to a simmer.
Return the seared merguez sausages to the tagine. Cover and let it simmer on low heat for about 30-40 minutes, or until the sausages are cooked through and the flavors have melded together beautifully.
Transfer the Moroccan Tagine with merguez sausage to a serving dish. You can enjoy it as is or serve it with couscous, crusty bread, or rice. Sprinkle some fresh herbs like cilantro or parsley on top for a burst of freshness. Dig in and savor the North African flavors!
