Gather all the necessary ingredients for the sandwich. You will need 2 slices of bread, 2-3 jalapeno peppers, 1 cup of shredded cheese (such as cheddar or Monterey Jack), 2 tablespoons of butter, and a pinch of salt.
Using a sharp knife, carefully slice the jalapenos into thin rounds. Remove the seeds if you prefer a milder spice level, or leave them in for an extra kick.
Take one slice of bread and spread one tablespoon of butter on one side. Repeat with the second slice of bread.
Place the buttered side of one bread slice down on a heated skillet or griddle. Sprinkle half of the shredded cheese evenly on top. Next, arrange the sliced jalapenos over the cheese. Finally, sprinkle the remaining cheese on top of the jalapenos.
Take the second slice of bread with the buttered side up and place it on top of the cheese and jalapenos, buttered side facing outwards.
