In a small saucepan over low heat, warm 1 cup of olive oil. Add your choice of flavorings, such as herbs, spices, or citrus zest. Let the mixture infuse for 10 minutes, stirring occasionally. Remove from heat and let it cool completely.
In a mixing bowl, whisk together 2 cups of whole milk, 1 cup of heavy cream, 3/4 cup of granulated sugar, and a pinch of salt. Add 5 egg yolks and whisk until well combined. Gradually pour in the infused olive oil while whisking continuously.
Transfer the mixture to a clean saucepan and cook over medium heat, stirring constantly, until it thickens and coats the back of a spoon. This should take about 8-10 minutes. Do not let it boil.
Pour the cooked mixture into a separate bowl and cover it with plastic wrap, making sure the wrap touches the surface of the mixture to prevent a skin from forming. Refrigerate for at least 4 hours or overnight.
Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions. Transfer the churned ice cream into a lidded container and freeze for at least 4 hours, or until firm.
When you're ready to indulge, scoop out a generous serving of your olive oil ice cream. Get creative and serve it with toppings like balsamic reduction, sea salt, or even a drizzle of additional olive oil. Enjoy the surprising twist of flavors!
