In a large mixing bowl, combine 2 cups of all-purpose flour, 1/4 cup of granulated sugar, 2 teaspoons of instant yeast, and a pinch of salt. Mix well. In a separate microwave-safe bowl, heat 1/2 cup of milk and 2 tablespoons of butter until the butter is melted. Allow the mixture to cool slightly, then add it to the flour mixture. Stir until a soft dough forms.
Transfer the dough to a well-floured surface and knead for about 5 minutes, or until the dough is smooth and elastic. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1-1.5 hours, or until it has doubled in size.
In a small bowl, mix together 1/4 cup of softened butter, 1/2 cup of brown sugar, and 1 tablespoon of ground cinnamon until well combined. Set aside.
Punch down the risen dough and transfer it to a floured surface. Roll it out into a rectangle that's about 1/4 inch thick. Spread the cinnamon filling evenly over the dough, leaving a small border around the edges. Starting from one of the long sides, tightly roll up the dough into a log.
Using a sharp knife, cut the rolled dough into slices that are about 1 inch thick. Place the slices on a greased baking sheet, spacing them apart to allow for rising. Cover with a towel and let them rise for another 30 minutes. Preheat the oven to 375°F (190°C). Once the pastries have risen again, bake them for about 15-20 minutes, or until golden brown and fragrant.
Remove the pastries from the oven and let them cool slightly. Drizzle with a powdered sugar glaze if desired. Serve warm, and savor every delightful, cinnamon-filled bite!
