Before you start, make sure you have all the necessary ingredients at hand. You'll need almond flour, powdered sugar, egg whites, sugar, matcha powder, and cream of tartar. Be sure to measure everything precisely, because macarons are all about balance!
In a bowl, sift together the almond flour, powdered sugar, and matcha powder. This will ensure that your macarons turn out smooth and without any lumps. Once sifted, mix the dry ingredients together until well combined.
In a separate bowl, add the egg whites and cream of tartar. Using an electric mixer, start whisking on low speed until the egg whites become frothy. Gradually increase the speed to medium and continue whisking until soft peaks form.
While continuing to whisk, slowly add the sugar to the egg whites, about a tablespoon at a time. Whip until the sugar is fully incorporated and the egg whites have reached stiff peaks. You should be able to turn the bowl upside down without any of the mixture falling out!
Now, it's time to fold in the sifted dry ingredients. Gently add about one-third of the dry mixture into the whipped egg whites. Using a spatula, gently fold the dry ingredients into the egg whites, being careful not to overmix. Repeat this process until all the dry ingredients are incorporated.
Transfer the macaron batter into a piping bag fitted with a round tip. Pipe small circles onto a baking sheet lined with parchment paper, spacing them a couple of inches apart. Once piped, tap the baking sheet gently on the counter to release any air bubbles. Let the macarons rest for about 30 minutes. This helps them develop a smooth, glossy shell.
Preheat your oven to 300°F (150°C). Bake the macarons for about 15-18 minutes, or until they have risen and developed a firm shell. Remove them from the oven and allow them to cool completely on the baking sheet before gently removing them. Be patient, my friend!
Once the macarons are fully cooled, carefully remove them from the baking sheet. Match up similar-sized macaron shells and spread your favorite filling, such as matcha ganache or buttercream, on one shell. Sandwich it with another shell and gently press together. Voila! Your Matcha Macarons are ready to be devoured!
