First, sift together the almond flour and powdered sugar to remove any lumps. In a separate bowl, whisk the egg whites until they form soft peaks. Gradually add the granulated sugar to the egg whites, whisking constantly, until they form stiff peaks. Gently fold the sifted dry ingredients into the beaten egg whites until well combined.
Transfer the macaron batter to a piping bag fitted with a round tip. Pipe small circles onto a baking sheet lined with parchment paper. Bang the baking sheet on the counter a few times to release any air bubbles. Let the piped macarons rest at room temperature for about 30 minutes to develop a smooth, shiny surface.
Preheat your oven to 300°F (150°C). Bake the macarons for 15-18 minutes, or until the tops are firm to the touch. Remove them from the oven and let them cool completely on the baking sheet before attempting to remove them.
Once the macarons are cool, carefully remove them from the baking sheet. Match up pairs of similar-sized macarons. Pipe your favorite filling (such as buttercream, ganache, or jam) onto the flat side of one macaron, then gently press another macaron on top to create a sandwich. Voila! Your macarons are ready to be devoured.
