In a mixing bowl, combine almond flour, powdered sugar, and rainbow gel food coloring. Sift the mixture and set it aside. In another bowl, whip egg whites and granulated sugar until stiff peaks form. Gently fold the dry mixture into the egg whites until fully incorporated. Transfer the batter into a piping bag fitted with a round tip.
Line a baking sheet with parchment paper. Hold the piping bag perpendicular to the baking sheet and pipe small circles of batter, about 1 inch in diameter, spacing them apart. Tap the baking sheet against the counter to remove any air bubbles. Let the shells sit at room temperature for 30 minutes to form a skin.
Preheat your oven to 300°F (150°C). Place the baking sheet in the oven and bake for 15-18 minutes, or until the shells are set and have developed their signature feet. Remove from the oven and let them cool completely on the baking sheet.
In a bowl, beat together softened butter, powdered sugar, vanilla extract, and a pinch of rainbow glitter. Mix until light and fluffy. Transfer the filling into a piping bag fitted with a star tip.
Pair up the macaron shells by size. Pipe a dollop of filling onto the flat side of one shell and gently press another shell on top to create a sandwich. Repeat for the remaining shells. Sprinkle rainbow glitter on the edges of the filled macarons for extra sparkle.
