Start by carefully separating the egg whites from the yolks. You'll need one egg per serving. Make sure to keep the yolks intact, as we'll be using them later.
In a clean bowl, whisk the egg whites until they form stiff peaks. This may take a few minutes of vigorous whisking, but trust us, it's worth it!
Now comes the fun part! Take a small amount of your favorite filling, such as cooked bacon, shredded cheese, or sautéed veggies, and gently fold it into the whipped egg whites. Be inventive and get creative with your fillings!
Spoon the egg white mixture onto a baking sheet, forming little cloud-shaped nests. Make a well in the center of each nest with a spoon, ready to cradle the surprise yolk.
Carefully place the baking sheet in a preheated oven and bake the cloud nests at 375°F (190°C) for about 5 minutes. Keep an eye on them to ensure they don't over-brown.
Gently place one egg yolk in the center of each cloud nest. Return the baking sheet to the oven and bake for an additional 5 minutes, or until the egg yolks are cooked to your liking.
Carefully remove the cloud eggs from the oven, making sure not to let the surprise yolk spill out. Plate them up and get ready to experience a breakfast that's out of this world!
