In a blender, combine 1 cup of pineapple chunks, 1/2 cup of coconut milk, 1/4 cup of rum, and 1/2 cup of Kombucha.
Blend the ingredients on high until smooth and well combined. You want a creamy and thick consistency for your Pina Colada.
Take a cocktail glass and rim the edge with a slice of pineapple. Dip the rim into a plate filled with shredded coconut to create a tropical garnish.
