Take note
Handle food coloring with care as it can stain clothing and surfaces. Make sure to allow enough time for the cake to cool completely before frosting.
In a large mixing bowl, combine 2 ½ cups of all-purpose flour, 2 ½ teaspoons of baking powder, and ½ teaspoon of salt. In a separate bowl, cream together 1 cup of unsalted butter and 2 cups of granulated sugar until light and fluffy. Beat in 4 eggs, one at a time, then stir in 1 teaspoon of vanilla extract. Gradually add the dry ingredients to the butter mixture, alternating with 1 cup of milk. Divide the batter evenly into 6 separate bowls.
Using gel food coloring, tint each bowl of batter with your desired colors of the rainbow (red, orange, yellow, green, blue, and purple). Start with a small amount of coloring and gradually add more until the desired shade is achieved. Mix thoroughly to ensure even color distribution.
Grease and flour three 8-inch round cake pans. Starting with the purple batter, pour a spoonful into the center of the first pan. Gently tap the pan on the counter to spread the batter evenly. Repeat this process with the remaining colors, creating layers on top of each other (purple, blue, green, yellow, orange, red) until all the batter is used.
Preheat your oven to 350°F (175°C). Place the cake pans in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Remove the pans from the oven and let the cakes cool in the pans for 10 minutes. Then transfer them to a wire rack to cool completely.
Once the cakes have cooled, place the first layer on a serving plate. Spread a thin layer of frosting of your choice (such as vanilla buttercream) over the surface. Add the second layer and repeat. Finally, place the third layer on top. Frost the entire cake, covering the top and sides with a thick layer of frosting. You can also get creative with colorful sprinkles, edible glitter, or fondant decorations.
Using a sharp knife, slice into your magnificent rainbow cake and marvel at the beautiful layers of color. Serve a generous slice to yourself and your delighted guests. Enjoy!
