Soak 1 cup of red beans in water overnight. Drain the water and transfer the beans to a pot. Add 4 cups of water and bring to a boil. Reduce heat to low and simmer for 1 hour or until the beans are soft. Mash the beans with a potato masher or fork. Add 1 cup of sugar and cook for another 10 minutes. Remove from heat and let it cool.
Fill a blender with ice cubes and blend until you achieve a fine snow-like texture. If you don't have a blender, you can also use a shaved ice machine. Transfer the shaved ice into serving bowls or glasses.
Pour the prepared red bean paste over the shaved ice. You can also add other toppings like chopped fruit, sweetened condensed milk, or a drizzle of chocolate syrup. Get creative and make it your own!
