Slice the eggplant into 1/4-inch thick rounds. Sprinkle salt on both sides of each slice and let them sit for about 30 minutes. This will help draw out excess moisture and reduce the bitterness.
Heat some olive oil in a large skillet over medium heat. Add chopped onions and garlic, and sauté until they turn translucent and fragrant. This will take about 5 minutes.

Pour the béchamel sauce over the layered Moussaka, covering it completely. Bake in a preheated oven at 375°F (190°C) for about 40-45 minutes, or until the top is golden brown and bubbly.
Remove the Moussaka from the oven and let it cool for a few minutes. Cut into squares or rectangles, serve on plates, and get ready to indulge in a Mediterranean masterpiece!
