Gather all the necessary ingredients for this flavorful dish. You'll need 1 cup of masoor dal (red lentils), 2 cups of water, 1 tablespoon of oil, 1 onion (finely chopped), 2 garlic cloves (minced), 1 teaspoon of cumin seeds, 1 teaspoon of turmeric powder, 1 teaspoon of garam masala, 1/2 teaspoon of cayenne pepper (adjust to your spice preference), 1 teaspoon of salt, and a handful of fresh cilantro leaves (chopped).
In a large saucepan, add the masoor dal and water. Bring it to a boil over medium heat and then reduce the heat to low. Let the lentils simmer uncovered for about 15-20 minutes or until they become soft and mushy. Stir occasionally to prevent sticking.
In a separate pan, heat the oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds. Next, add the chopped onion and minced garlic. Sauté until the onion turns translucent and the garlic becomes fragrant.
To enhance the flavors of the curry, sprinkle in the turmeric powder, garam masala, and cayenne pepper. Stir everything together and cook for another minute or until the spices release their aroma.
Transfer the cooked lentils into the pan with the sautéed spices. Mix well to combine all the flavors. Add salt to taste and simmer the dal on low heat for an additional 5-10 minutes, allowing the flavors to meld together.
