First things first, let's assemble all the ingredients you'll need for your chicken Biryani. You'll need: chicken (500g), basmati rice (2 cups), onions (2, sliced), tomatoes (2, chopped), ginger-garlic paste (2 tablespoons), yogurt (1/2 cup), Biryani masala powder (2 tablespoons), green chilies (2, slit), mint leaves (a handful), coriander leaves (a handful), ghee or oil (4 tablespoons), salt (to taste), and water (4 cups).
To infuse the chicken with flavors, marinate it in a mixture of yogurt, Biryani masala powder, ginger-garlic paste, and salt. Make sure each piece is well coated. Leave the marinated chicken aside for at least 30 minutes to let the flavors meld together.
Rinse the basmati rice under running water until the water runs clear. In a large pot, bring water to a boil and add the rice along with salt. Cook the rice until it is 70% done (still slightly firm). Drain the water and set the partially cooked rice aside.
In a separate deep pan, heat ghee or oil over medium heat. Add the sliced onions and cook until they turn golden brown. Remove half of the caramelized onions and set them aside for garnishing. To the remaining onions in the pan, add the marinated chicken and cook until it is no longer pink. Now, layer half of the partially cooked rice over the chicken followed by a sprinkle of mint leaves, coriander leaves, and slit green chilies. Repeat the layering process with the remaining rice, herbs, and chilies.
Cover the pan with a tight-fitting lid and cook the Biryani on low heat for about 15-20 minutes. This slow-cooking process will allow the flavors to blend and the rice to cook completely. Avoid opening the lid too frequently during this stage to retain the steam and moisture.
Once the Biryani is cooked, switch off the heat and let it rest for 5 minutes. Garnish it with the reserved caramelized onions and additional mint leaves. Serve hot with raita or a side of your choice. Get ready to savor the heavenly flavors of your homemade chicken Biryani!
