Start by brewing a strong hibiscus tea. Add 2 cups of boiling water to a tea infuser with 3 tablespoons of dried hibiscus petals. Let it steep for about 5 minutes, then remove the infuser.
While the tea is still warm, add 2 tablespoons of honey or agave syrup and stir until it's dissolved. Then transfer the tea to the refrigerator and let it chill for at least 1 hour, or until cold.
Once the hibiscus tea is chilled, it's time to mix the highball! In a cocktail shaker filled with ice, combine 2 ounces of white rum, 1 ounce of freshly squeezed lime juice, and 1 ounce of the chilled hibiscus tea. Shake it up until well combined.
Strain the mixture into a glass filled with ice. You can use a fine mesh strainer or a cocktail strainer to remove any ice shards or tea sediment. Top off the glass with sparkling water and garnish with a lime wedge and a sprig of fresh mint.
