Gather all your ingredients: 1 lb chicken, boneless and skinless, 1 cup onion (diced), 1 cup bell pepper (diced), 1 cup celery (diced), 3 cloves garlic (minced), 2 tablespoons vegetable oil, 1 can diced tomatoes (14.5 oz), 4 cups chicken broth, 2 tablespoons Cajun seasoning, 1 teaspoon dried thyme, 1 teaspoon dried oregano, 1/2 teaspoon cayenne pepper, salt and black pepper to taste, 1 bay leaf.
Heat the vegetable oil in a large pot over medium-high heat. Add the chicken and cook until browned on all sides. Remove the chicken from the pot and set aside.
In the same pot, add the onion, bell pepper, celery, and garlic. Cook until the vegetables are softened, about 5 minutes.
Add the Cajun seasoning, dried thyme, dried oregano, cayenne pepper, salt, and black pepper to the pot with the vegetables. Stir well to coat.
Return the chicken to the pot, along with any juices that have accumulated. Add the diced tomatoes, chicken broth, and bay leaf. Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes, until the chicken is cooked through.
Discard the bay leaf and taste the gumbo to adjust the seasoning if needed. Serve the spicy chicken gumbo hot with steamed rice or crusty bread. Get ready for a flavor explosion!
