Grab 2 pounds of chicken bones (or leftover chicken carcass) and 1 onion. You'll also need 2 carrots, 2 celery stalks, 3 cloves of garlic, a handful of fresh parsley, 2 bay leaves, and 10 cups of water.
Chop the onion, carrots, and celery into rough chunks. Crush the garlic cloves and tie the parsley and bay leaves together with kitchen twine. Your veggies are ready for their stock party!
In a large pot, add the chicken bones, chopped veggies, garlic cloves, parsley bundle, and bay leaves. Pour in 10 cups of water and season with salt and pepper. Bring the pot to a boil, then reduce the heat and let it simmer for 2-3 hours, stirring occasionally.
Using a fine-mesh sieve or cheesecloth, strain the stock into a large bowl or saucepan. Discard the solids. Let the stock cool before transferring it to airtight containers. Refrigerate for up to 4 days or freeze for longer storage.
