Gather all the ingredients needed for the soup. You'll need 1 whole chicken, 3 carrots, 3 stalks of celery, 1 onion, 4 cloves of garlic, 8 cups of chicken broth, 8 ounces of egg noodles, 1 tablespoon of olive oil, 1 teaspoon of dried thyme, salt, and pepper.
In a large pot, add the chicken and cover it with water. Bring it to a boil over medium-high heat and let it simmer for 1 hour until the chicken is fully cooked. Remove the chicken from the pot and set it aside to cool. Once cooled, remove the skin and bones, and shred the meat.
Dice the carrots, celery, and onion. Mince the garlic cloves. Heat the olive oil in a pot over medium heat and sauté the vegetables and garlic until they are tender, about 5 minutes.
Pour the chicken broth into the pot with the vegetables. Add the dried thyme and season with salt and pepper to taste. Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes to allow the flavors to blend.
While the soup is simmering, cook the egg noodles separately according to package instructions. Drain them and set aside.
Once the soup has simmered for 10 minutes, add the shredded chicken and cooked noodles to the pot. Stir everything together and let it simmer for an additional 5 minutes to heat through.
Ladle the homemade Chicken Noodle Soup into bowls and garnish with fresh herbs if desired. Grab a spoon, cozy up on the couch, and savor every comforting bite!
