Gather all the ingredients needed for the recipe. You'll need 2 boneless, skinless chicken breasts, 1 onion (diced), 3 carrots (peeled and sliced), 3 celery stalks (sliced), 4 cups of chicken broth, juice of 2 lemons, 1 teaspoon of dried thyme, salt and pepper to taste, and fresh parsley for garnish.
Place the chicken breasts in a pot of boiling water and cook for about 15-20 minutes, or until the chicken is cooked through. Once done, remove the chicken from the pot and let it cool slightly. Shred the chicken using forks or your hands, and set it aside.

Add the shredded chicken and lemon juice to the pot. Stir well to combine. Continue cooking for another 5 minutes to heat the chicken through.
Season the soup with dried thyme, salt, and pepper to taste. Adjust the seasoning according to your preference. Remember, you can always add more, but you can't take it out!
