Start by chopping all your vegetables. You'll need 2 carrots, 2 celery stalks, 1 onion, 2 cloves of garlic, and 1 bell pepper. Dice them up into small, bite-sized pieces.
In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and garlic, and sauté until they become fragrant and slightly golden, about 5 minutes.
Next, add the chopped carrots, celery, and bell pepper to the pot. Stir everything together and let the vegetables cook for another 5 minutes.
Now it's time to add some flavor! Season the vegetables with 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1 teaspoon of dried thyme, and 1 bay leaf. Pour in 6 cups of vegetable broth and bring the soup to a boil. Once boiling, reduce the heat to low and let it simmer for 20-25 minutes.
At this point, you can decide if you prefer a smooth or chunky soup. If you like it chunky, simply remove the bay leaf and leave it as is. But if you prefer a smoother texture, use an immersion blender or transfer the soup to a blender and blend until desired consistency.
