Tap the baking sheet gently on the counter to release any air bubbles. Let the piped macarons sit at room temperature for about 30 minutes to form a thin shell. Preheat the oven to the recommended temperature and bake the macarons until they are crisp on the outside and slightly soft on the inside, following the recipe instructions.
Allow the baked macarons to cool completely before attempting to match them up. Look for pairs that are similar in size and shape to create uniform tower tiers. Flip half of the macarons upside down for the assembly process.
Using a dab of buttercream or ganache, attach the matched macarons together to form tiers. Start with the largest macarons at the bottom and work your way up. Make sure each tier is secure before adding the next one. You can also place a cardboard circle between each tier for stability. Continue until you reach the top, where you can place a beautiful macaron as the crown jewel.
