Gather all the necessary ingredients: 2 cups all-purpose flour, 1/4 cup granulated sugar, 1 teaspoon baking powder, 1/2 teaspoon salt, 1/2 cup unsalted butter (cold and cut into small cubes), 1/4 cup milk, 1 teaspoon vanilla extract, and your favorite jam for the wings.
In a large bowl, whisk together the flour, sugar, baking powder, and salt. Add the cubed butter and use your fingers to mix it into the dry ingredients until the mixture resembles coarse crumbs. Be gentle, we don't want any butterfly casualties. Stir in the milk and vanilla extract until a soft dough forms.
Flour your work surface and roll out the dough to a thickness of about 1/4 inch. Use a butterfly-shaped cookie cutter to cut out as many butterfly shapes as possible. Carefully transfer the butterfly shapes onto a baking sheet lined with parchment paper, leaving a bit of space between them.
Using a teaspoon or a small piping bag, place a dollop of your favorite jam onto one half of each butterfly shape. Gently fold over the other half to create the wings, pressing the edges together to seal. Don't worry if some jam escapes, it just adds to the charm!
Preheat your oven to 350°F (175°C). Pop the baking sheet into the oven and bake the butterfly biscuits for 12-15 minutes, or until they turn a lovely golden brown. Keep an eye on them, as they can quickly go from delicate to burnt.
Remove the baking sheet from the oven and allow the butterfly biscuits to cool for a few minutes on the sheet. Transfer them to a wire rack to cool completely. Once cooled, indulge in the joy of biting into a sweet, jam-filled butterfly biscuit. Share them with friends or keep them all to yourself!
