Start by removing the outer leaves of a large cabbage. Rinse it under cold water to clean it. Bring a large pot of water to a boil and blanch the cabbage for 2-3 minutes to soften the leaves. Carefully remove the cabbage from the pot and let it cool.
In a mixing bowl, combine 1 pound of ground meat (beef, pork, or a mix) with 1 cup of cooked rice, 1 finely chopped onion, 2 minced garlic cloves, 1 beaten egg, and a handful of chopped fresh parsley. Season with salt, pepper, and any other herbs or spices you fancy.
Take a softened cabbage leaf, place a spoonful of filling in the center, and carefully fold the sides over the filling. Roll the leaf tightly, just like you're rolling up a secret message. Repeat until all the leaves and filling are used up.
In a large pot, arrange the cabbage rolls seam-side down. Pour in enough vegetable or chicken broth to cover the rolls. Add a few bay leaves and a sprinkle of paprika for extra flavor. Simmer the rolls on low heat, covered, for 45-60 minutes, or until the cabbage is tender and the filling is cooked through.
To serve, carefully transfer the cabbage rolls to a platter, spoon some of the cooking broth over the top, and garnish with fresh parsley. These little bundles of delight are fantastic on their own, but feel free to enjoy them with a dollop of sour cream or a side of mashed potatoes.
