In a medium saucepan, combine 1 cup of champagne and 2 packets of unflavored gelatin. Let it sit for a few minutes to allow the gelatin to absorb the liquid.
Place the saucepan over low heat and stir the champagne and gelatin mixture until the gelatin has completely dissolved. Be patient, my friend, it may take a few minutes.
Remove the saucepan from heat and stir in 1/2 cup of sugar and 1/2 cup of honey. Give it a good stir until everything is well combined and the sweeteners have dissolved.
Time to add some zest! Squeeze the juice of 1 lemon and 1 orange into the saucepan, and give it another stir. The citrusy goodness will add a refreshing twist to your jelly shots.
Pour the mixture into your desired shot glasses or molds, and pop them in the fridge to chill for at least 4 hours, or until set. Patience is a virtue, my friend.
Once the jelly shots are set, garnish them with some lemon or orange zest for an extra touch of elegance. Now, it's time to bring on the bubbly goodness! Cheers!
