Start by washing a pound of fresh strawberries and removing their stems. Then, slice the strawberries into small pieces and place them in a bowl.
Pour a cup of your favorite champagne over the sliced strawberries. Let them soak in the bubbly goodness for about 30 minutes to infuse them with the champagne flavors.
Transfer the champagne-infused strawberries to a blender and blend until smooth. If desired, add a tablespoon of honey or sugar to sweeten the mixture, but this step is optional.
Pour the blended mixture into popsicle molds, leaving a little bit of room at the top for expansion during freezing. If you don't have popsicle molds, you can also use small paper cups or ice cube trays with popsicle sticks.
Place the filled popsicle molds in the freezer and let them freeze for at least 4 hours or until solid. Once frozen, remove the popsicles from the molds by running them under warm water for a few seconds. Now, sit back, relax, and enjoy your refreshing Champagne-Infused Strawberry Popsicles!
