Prepare the Dough

In a large mixing bowl, combine 2 cups of all-purpose flour, 1 teaspoon of salt, and 1/2 cup of cold unsalted butter. Use your fingertips to rub the butter into the flour until the mixture resembles breadcrumbs. Gradually add 1/2 cup of cold water, mixing gently until the dough forms a ball. Knead the dough on a lightly floured surface for about 5 minutes until it becomes smooth and elastic.

Make the Filling

Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Add 1 finely chopped onion and cook until softened. Add 1 pound of ground beef, 1 teaspoon of paprika, 1/2 teaspoon of dried thyme, and salt and pepper to taste. Cook until the beef is browned and cooked through. Remove from heat and let it cool slightly.

Assemble the Kibinai

Divide the dough into 12 equal pieces. On a floured surface, roll out each piece into a circle about 6 inches in diameter. Spoon about 2 tablespoons of the filling onto one half of the circle, leaving a small border around the edges. Fold the other half of the dough over the filling and press the edges together to seal. You can crimp the edges with a fork to make them look fancy!
