Delight your taste buds with our guide to making luscious Éclairs. These choux pastry treats are sure to wow your friends and family!
Take note
Handle hot ingredients and machinery with caution, and resist the urge to eat all the Éclairs in one sitting!
In a saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat. Once boiling, remove from heat and add flour. Stir vigorously until the mixture forms a smooth dough.
Let the dough cool slightly, then add eggs one at a time, beating well after each addition. The dough should be glossy and slightly sticky. Transfer the dough to a piping bag with a round tip, and pipe onto a baking sheet lined with parchment paper, forming éclair shapes.
Preheat your oven to 400°F (200°C). Bake the éclairs for 15 minutes, then reduce the heat to 350°F (180°C) and bake for an additional 10-15 minutes, until golden brown. Avoid opening the oven door during baking to prevent collapse!
Once the éclairs have cooled, use a sharp knife to make a small slit on one side. Fill a piping bag with your desired filling (such as pastry cream or whipped cream) and pipe into each éclair. For a finishing touch, dip the tops of the éclairs into a warm glaze made of melted chocolate or icing sugar mixed with water.
