Gather all the necessary ingredients and equipment before you start. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a small saucepan, combine 1 cup of apricot jam, 1 tablespoon of lemon juice, and 1/4 teaspoon of ground cinnamon. Cook over medium heat until the jam is melted and the mixture is smooth.
Unroll a sheet of thawed puff pastry onto a lightly floured surface. Cut it into 8 equal squares using a sharp knife or pizza cutter.
Place a tablespoon of the apricot filling in the center of each puff pastry square. Leave a small border around the edges.
Using the tip of a sharp knife, carefully make diagonal cuts on each corner of the puff pastry square, starting from the filling towards the corner. Repeat on all four corners.
Fold the opposite corners of the puff pastry square over the filling, slightly overlapping them in the center. Press down gently to seal the edges.
In a small bowl, beat an egg with a tablespoon of water. Brush the egg wash over the danishes to give them a golden and glossy finish. Place the danishes on the prepared baking sheet and bake for 15-18 minutes, or until puffed and golden.
Allow the danishes to cool on a wire rack for a few minutes before serving. Dust them with powdered sugar, if desired, and serve warm or at room temperature.
