Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Get all your ingredients ready: 1 cup of water, 1/2 cup of unsalted butter, 1/4 teaspoon of salt, 1 cup of all-purpose flour, 4 eggs, and your choice of pastry cream for filling.
In a medium saucepan, melt the butter and water over medium heat. Add the salt and bring the mixture to a boil. Once it's boiling, remove the saucepan from heat and quickly mix in the flour until you have a smooth dough. Let it cool for a few minutes.
One at a time, add the eggs into the cooled dough, beating well after each addition. This may require a bit of elbow grease, but trust us, it's worth it! Keep beating until the dough becomes glossy and smooth.
Transfer the dough into a piping bag fitted with a large round tip. Pipe the dough onto the prepared baking sheet, creating 4-inch long eclair shapes, spacing them a few inches apart. Pro-tip: You can also use a ziplock bag with the corner cut off if you don't have a piping bag!
Pop the baking sheet into the preheated oven and bake for 25-30 minutes, or until the eclairs are golden brown and puffed up. Once they're out of the oven, transfer them to a wire rack to cool completely.
Once the eclairs are cool, it's time to fill them with your chosen pastry cream. You can use a piping bag or a spoon to carefully inject the cream into each eclair. Don't hold back on the filling!
To finish off your perfect eclairs, you can drizzle melted chocolate over the top or dust them with powdered sugar. Get creative and add a personal touch!
