Before you embark on this chocolatey journey, make sure you have all the necessary ingredients. You'll need: 4 ounces of bittersweet chocolate, 1/2 cup of unsalted butter, 1 cup of powdered sugar, 2 large eggs, 2 large egg yolks, 1 teaspoon of vanilla extract, 6 tablespoons of all-purpose flour, and a pinch of salt.
Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust them with cocoa powder to prevent the cakes from sticking.
In a microwave-safe bowl, combine the bittersweet chocolate and butter. Microwave in 30-second intervals, stirring between each interval, until the mixture is melted and smooth.
In a separate bowl, whisk together the powdered sugar, eggs, egg yolks, and vanilla extract until well combined. Gradually add the chocolate mixture to the bowl while whisking continuously. Finally, add the flour and salt, and stir until the batter is smooth.
Divide the batter equally among the prepared ramekins. Place the ramekins on a baking sheet and bake in the preheated oven for about 10-12 minutes, or until the edges are set and the centers are still slightly jiggly.
Remove the ramekins from the oven and let them cool for a minute. Carefully run a knife around the edges of the cakes, then invert each ramekin onto a plate to release the lava cakes. Serve immediately and savor the heavenly combination of warm chocolate cake and gooey centers.
