Bring a pot of salted water to a boil and cook the macaroni according to package instructions until al dente. Drain and set aside.
In a separate saucepan, melt some butter over medium heat. Add flour and stir for a minute until lightly golden. Gradually whisk in milk and continue cooking until the sauce thickens. Remove from heat and add shredded cheese, stirring until melted and smooth.
Pour the cheese sauce over the cooked macaroni and mix until the macaroni is well-coated. Let it cool slightly.
Using your hands, grab a small handful of the macaroni and cheese mixture and shape it into a ball. Repeat with the remaining mixture.
In one bowl, whisk eggs. In another bowl, combine breadcrumbs with your favorite seasonings. Dip each macaroni and cheese ball into the whisked eggs, then roll it in the breadcrumb mixture until fully coated.
Heat oil in a deep pan or fryer to about 350°F (175°C). Carefully drop the coated macaroni and cheese balls into the hot oil and fry until golden brown and crispy. Use a slotted spoon to remove them from the oil and place them on paper towels to drain the excess oil.
