Prepare the Churro Dough

In a saucepan, combine 1 cup of water, 2 tablespoons of sugar, 1/2 teaspoon of salt, and 1/2 cup of unsalted butter. Bring this mixture to a simmer over medium heat, stirring occasionally until the butter has melted. Once melted, remove the saucepan from heat. Add 1 cup of all-purpose flour and stir until the mixture forms a ball of dough.

Fry the Churro Bites

In a heavy-bottomed pot, heat vegetable oil to 375°F (190°C). Using a piping bag or a plastic bag with the corner snipped off, pipe small portions of the dough into the hot oil. Cut the dough into bite-sized pieces directly over the hot oil. Fry the churro bites until they are golden brown, about 3-4 minutes. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

Coat with Cinnamon-Sugar

In a separate bowl, combine 1/2 cup of granulated sugar and 1 tablespoon of ground cinnamon. Toss the fried churro bites in the cinnamon-sugar mixture until evenly coated. For an extra touch, you can also drizzle them with chocolate sauce or serve them with caramel dip.
