To make rainbow macarons, you'll need: almond flour (1 cup), powdered sugar (1.5 cups), egg whites (3, preferably at room temperature), granulated sugar (1/4 cup), gel food coloring in rainbow colors (red, orange, yellow, green, blue, and purple).
In a food processor, pulse the almond flour and powdered sugar together until well combined. Sift the mixture into a bowl, discarding any large chunks. In a separate bowl, whisk the egg whites until foamy. Gradually add the granulated sugar while continuing to whisk. Keep whisking until stiff peaks form. Now, gently fold the almond flour mixture into the egg white mixture until fully incorporated.
Divide the macaron batter equally into six separate bowls. Add a different gel food coloring to each bowl, creating the colors of the rainbow. Mix each bowl until the color is evenly distributed throughout the batter. Feel free to get creative and let your inner artist shine!
