Ring in the summer with our delicious and fruity Raspberry Relish Rings! This refreshing treat will be a hit at any gathering.

Watch out for the raspberry seeds – they can be quite sneaky and get stuck in your teeth!
In a mixing bowl, combine 2 cups of fresh raspberries, 1/4 cup of granulated sugar, and the juice of 1 lemon. Use a fork or a potato masher to gently crush the raspberries and mix everything together until well combined.
Place a fine-mesh sieve over another bowl and pour the raspberry mixture into the sieve. Use the back of a spoon to press the mixture through the sieve, separating the relish from the seeds. Discard the seeds and transfer the strained relish into a clean bowl.
Using a round cookie cutter or a glass with a circular rim, cut out circles from slices of pound cake. Aim for about 2 inches in diameter. Set the cake circles aside.
Take one cake circle and spread a generous amount of the raspberry relish on top. Top it off with another cake circle to make a sandwich. Repeat this process with the remaining cake circles and relish until you have a stack of relish-filled rings.
Garnish your Raspberry Relish Rings with a fresh raspberry on top of each and a sprinkle of powdered sugar. Serve chilled and enjoy!
