Add 3/4 cup of unsweetened almond milk, 1/4 cup of melted coconut oil, and 1 teaspoon of vanilla extract to the dry ingredients. Stir until just combined.
Roll the dough into a ball and transfer it to a lightly floured surface. Roll it out to a 1/2-inch thickness. Use a donut cutter or a round cookie cutter to cut out donut shapes. Set aside.
Heat about 3 inches of vegetable oil in a deep skillet or pot to 375°F (190°C). Carefully drop a few donuts into the hot oil and fry for about 2-3 minutes per side, until golden brown. Remove with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Repeat with the remaining donuts.
In a microwave-safe bowl, combine 1 cup of dairy-free chocolate chips and 2 tablespoons of coconut oil. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.
Dip each cooled donut into the chocolate glaze, gently shaking off any excess. Place the glazed donuts on a wire rack to allow the glaze to set.
