Take note
Please be cautious when working with hot oil. Make sure to handle the donuts with care as they will be fragile. And remember, donuts are ridiculously delicious and addictive, so be prepared to have seconds!
In a large bowl, combine 2 cups of all-purpose flour, 1/2 cup of sugar, 2 teaspoons of baking powder, and 1/2 teaspoon of salt. Mix them together until well combined.
In a separate bowl, whisk together 3/4 cup of almond milk, 1/4 cup of melted coconut oil, and 1 teaspoon of vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined.
Lightly flour a clean surface and turn out the dough onto it. Gently knead the dough a few times until smooth. Roll it out to about 1/2-inch thickness. Use a donut cutter or a glass and a smaller round cutter to shape the donuts.
Heat vegetable oil in a deep pan or a deep fryer to 350°F (175°C). Carefully add the donuts to the hot oil, cooking each side for about 1-2 minutes until golden brown. Remove and drain the donuts on a paper towel-lined plate.
For the glaze, in a small bowl, combine 1 cup of powdered sugar, 2 tablespoons of fruit juice (such as strawberry or orange), and a splash of vanilla extract. Whisk until smooth and creamy.
Dip each cooled donut into the fruity glaze, allowing any excess glaze to drip off. Place the glazed donuts on a wire rack to set for about 10-15 minutes.
